Let's start with the cheeses.

Eden: A raw goat's milk cheese we only produce for the Holidays, it's made in the style of French Pyrenees Tomme and then rubbed with a mixture of grapeseed oil, rosemary, and basil. This rustic farmhouse-style cheese it's aged for a at least 60 days and has a natural rind.

Thomasville Tomme: An homage to our hometown, this raw grass-based cow's milk cheese has a higher butterfat milk provides this cheese with smooth, rich, and buttery characteristics. Tomme is subtle and complex with a thin, natural rind that gives way to a semi-firm golden interior. It's finish is tangy and slightly salty.

Black Swan: One of the most sought after cheeses we make, it's washed in Stone Brewing Company's Arrogant Bastard Ale and has a slight orange hued rind with a firm texture. Modeled after a French farmhouse cheese, Black Swan blends the perfect amount of tanginess and creaminess. The beer wash gives this cheese a long finish with a hint of hops, malt and just a bit of pleasant bitterness.

Georgia Gouda: A semi-hard cheese that is both dense and smooth. It has a more buttery, creamy, and mellow flavor than your typical Gouda. Additionally, the Jersey cow's milk helps the cheese's sweet, nutty, and rich flavors shine through.

Asher Blue: A unique blue cheese, its intricate flavors shift with every bite. One will be meaty. The next sweet. Another earthy. The dense, creamy paste keeps your palate on its toes while deep, flowering blue veins hint at a robust finish. But, unlike many blue cheeses, it maintains an unexpected mild finish.
