Thomasville Tomme
Description
An homage to our hometown, this raw grass-based cow's milk cheese is made in the style of a French mountain Pyreneese Tomme. The higher butterfat milk provides this cheese with smooth, rich, and buttery characteristics. Tomme is subtle and complex with a thin, natural rind that gives way to a semi-firm golden interior. It's finish is tangy and slightly salty.
How We Make It
Aged for 60 days, Tomme goes from milk to wheel in about five hours. We don't cook this cheese or press it, giving the cheese distinctive eye holes.
Pairing Suggestions
For wines, you can't go wrong pairing Tomme with a delicate Syrah or a light red wine like Pinot Noir. If you're a brew head, try it with a hoppy pale ale like Oskar Blue's Dale's Pale Ale or Flying Dog - Doggie Style Classic Pale Ale.

Green Hill
Description
A double-cream beauty made from our pasteurized cow's milk, this soft-ripened Camembert-style cheese has a silky texture and a sweet, buttery flavor. We handcraft each wheel individually giving it a thin bloomy rind that gives way to a rich and exuberant paste coating your palate with each bite.
How We Make It
Crafting a batch of Green Hill takes approximately five hours. Each wheel is hand-ladled and ripened for two weeks before we hand wrap them for shipping.
Pairing Suggestions
To make the occasion truly sparkle, pair it with a Champagne or sparkling wine. The bubbles just cut right through the rich double cream of the cheese. Beer drinkers can pick up a Belgian Trippel ale to refresh your palate, let us suggest Allagash's Tripel Reserve for a tasty treat.

Each wheel is approximately 8oz and wrapped in plastic wrap. We then wrap the wheel in butcher paper and keep it cool with icepacks when needed, our cheeses are delivered within two days. Green Hill is best when eaten within seven days after you've cut into the cheese. The longer it is left unwrapped, the softer the cheese will become. Any uneaten portion of Green Hill should be wrapped with wax paper or plastic and stored in a cool place.
How to Serve
When eating Green Hill by itself, the cheese is at its peak when allowed to warm up to room temperature, this gives the buttery paste a chance to soften and enhances the cheese's natural flavors. When using Green Hill while cooking, its better to leave the cheese cold and firm.

Georgia Gouda
Description
Made in the style of a Dutch Gouda, this semi-soft cheese is both dense and smooth. However, unlike most Goudas that are made in Holland, ours is made with milk from Jersey cows. This provides a more buttery, creamy, and mellow flavor than your typical Gouda. Additionally, using Jersey cow's milk helps the sweet, nutty, and rich flavors that dominate the grassy pastures our cows graze in daily shine through. Finally, our Gouda has great balance of protein, fat and salt making it one of the most versatile cheeses we handcraft.
How We Make It
Georgia Gouda is aged for at least 60 days. We wash the curds in hot water which is unique for a harder style cheese. Crafting a wheel of Georgia Gouda takes five to six hours.
Pairing Suggestions
Considered a great cheese to pair with beer, our favorites are either an Imperial Stout or a big American Porter. A few we'd suggest include Founders Brewery Kentucky Breakfast Stout, Bell's Porter, and Great Divide's Oak Aged Yeti Imperial Stout. For the red wine drinkers, a tasty Merlot or Zinfandel will do the trick while a rich Riesling works well for white wine fans.

Heat
Description
A flavored cheese, Heat has a mild, slow burn coupled with smokey tinges that make this decidedly different than any run-of-the-mill "pepperjack" you may have seen in grocery aisles. Real chili peppers including Pasilla and Ancho provide the kick while the chipotle and paprika give Heat its smokiness. This cheese is semi-soft and won't singe your taste buds. We promise.
How We Make It
For every batch of Heat, we make our own chile paste. When the paste is ready, we mix it into our curds along with other dried chillies and seasonings. Aged for at least 60 days, this cheese goes from milk to wheel form within approximately four hours.
Pairing Suggestions
To offset the peppers in our handcrafted Heat, we usually reach for a few different beers including Dogfish Head's 60-minute IPA, Bell's Two-hearted Ale, Anchor Steam, or Brooklyn Brewery's Summer Ale. For vino, to contrast the spicy notes in the cheese you'll want to stick with a floral, medium-bodied wine like Gewurtztraminers or to bring out the smokiness grab a red wine like Malbec.

Asher Blue
Description
A unique blue cheese, its intricate flavors shift with every bite. One will be meaty. The next sweet. Another earthy. The dense, creamy paste keeps your palate on its toes while deep, flowering blue veins hint at a robust finish. But, unlike many blue cheeses, it maintains an unexpected mild finish. Named after the Littles' middle child, this cheese causes just enough charming mischief during our hand piercing process to bear his name.
How We Make It
Each wheel of Asher Blue is pierced 50 times by hand on each side. Our process yields a natural rinded blue cheese.
Pairing Suggestions
Beverage-wise Asher is versatile. It pairs well with zesty wines like Port or Sauternes, but also stands up to full-bodied reds like Californiat Cabernet Sauvignon. For our beer drinkers, a strong ale like Chimay Blue or Arrogant Bastard Ale is your best bet.

Black Swan
Description
A washed cheese, it began as an experiment. Now, it's one of the most sought after cheeses we make. Washed in Stone Brewing Company's Arrogant Bastard Ale, it has a slight orange hued rind and a firm texture. Modeled after a French farmhouse cheese, Black Swan blends the perfect amount of tanginess and creaminess. The beer wash gives this cheese a long finish with a hint of hops, malt and just a bit of pleasant bitterness.
How We Make It
Aged for at least 120 days, this cheese is bathed in beer four separate times during the aging process.
Pairing Suggestions
Wine drinkers will find that a smooth white wine like a Pinot Blanc or a bold red wine like Cabernet Sauvignon best accommodate the range of flavors in Black Swan. On the beer side of the equation, Stone Brewing Company's Arrogant Bastard Ale. Did you really think we'd suggest anything else?

Lovely
Description
A Gruyere cheese, Lovely was made by owner Jeremy in honor of his wife Jessica who adores this style. It has a semi-firm texture and is dotted throughout by tiny eye-holes associated with Swiss-style cheeses. Lovely's sweet, buttery, and nutty flavors get better with every bite and leave you wanting more.
How We Make It
Aged for five to six months, Lovely is made in the style of Beaufort - an alpine-style cheese from France. One of the few cooked and pressed cheeses we hand craft, that process brings out the sweet, nutty flavors typically associated with this style of cheese.
Pairing Suggestions
Wine drinkers can't go wrong with a Blanc de Noir or Chardonnay but if you're feeling experimental try Lovely with a complex and fruity Gamay. For those that prefer ale, we highly recommend quaffing a Scotch Ale or an Extra Special Bitter (ESB) to counteract Lovely's buttery notes.

Lil Moo
Description
One of the newest additions, Lil Moo is a fresh spreadable cow's milk cheese. Soft and creamy, it's most similar to a German Boursin-style cheese while its texture can best be compared to cream cheese. However, the Lil Moo distinguishes itself with its faint yellow coloring and delectable taste which comes from our grass-based milk. This is the cheese everyone is bunched around when you're entertaining family, friends, or hosting a holiday gathering.
How We Make It
Our absolute freshest cheese, it goes from milk to mouth in approximately four days. We drain it just like ricotta, but our unique recipe gives our cheese a more spreadable consistency.
Pairing Suggestions
To bring out the natural flavors in this cheese, try light, bright white wines like Pinot Grigio, Sauvignon Blanc, and Riesling. Or, if you're feeling bubbly pick up a Moscato or a Sparkling Vouvray. Our hop heads will be pleased to know that the sweet flavors of Little Moo, provide ample reason to grab a six pack of your favorite American Black IPA.

Eden
Description
Made in the style of a French Pyrenees Tomme and then rubbed with a mixture of grapeseed oil, rosemary, and basil - this raw goat's milk cheese is smooth and creamy. Eden has great late spring and early summer grassy, herbal flavors. The inherent "goatiness" of the cheese is really complimented by notes of basil and rosmary. It finishes with a slight tang and just a small bit of bite.
How We Make It
Eden is made in the same fashion as our Holly Springs after the wheels are oiled and herbed, we vacuum seal them to compress the texture. That step gives Eden a drier more crumbly texture.
Pairing Suggestions
A beautiful Bandol Rosé would brings out the delicious herbal flavors of the cheese while the red fruit flavors and chalky minerality of the wine accentuates the intense floral character of both. A dry white wine such as a Sancerre or a Vouvray would be a delightful match as well. For the beer crowd, counter that herbal flavor with a malty, crisp California Common like Anchor Steam Beer or Flying Dog's Old Scratch Amber Lager.

How to Serve
Eden probably works best when featured on a cheese plate. It stands up in prepared dishes, but it does not melt well. Thus, we recommend serving it on a platter with a fruit paste, some roasted nuts and crackers. You could also try Eden in many recipes that call for a pecorino, just make sure to shave it thinly.

Holly Springs
Description
Our aged, raw goat's milk cheese, the ivory paste and semi-firm texture help highlight its warm, nutty, and sweet flavors. Handcrafted into wheels and aged for at least two months, Holly Springs is made in the style of our Thomasville Tomme. It has a creamy finish and a natural, light brown rind.
How We Make It
We make this cheese in the same way we handcraft Thomasville Tomme, only we use goat's milk. It's uncooked, unpressed and aged for 60 days. Holly Springs takes just five hours to go from milk to wheel.
Pairing Suggestions
To compliment the warm flavors of Holly Springs we suggest picking up a sauvignon blanc wine with fruit undertones that will help mellow Holly Springs' natural tanginess. Also, try a Spain's most popular white wine Albarino for a refreshing paring that cleanses your palate. The beer set will require a unique beer like the cask-condition Innis and Gunn or a American brown ale like Smuttynose's Old Brown Dog Ale to fully bring out the nutty flavors of this cheese.
